- 500 ml Whipping Cream (Heavy Cream)
- 130 g Granulated Sugar
- 70-80 ml Fresh Lemon Juice *approx 2-3 lemons depending on size
- In a medium pot over medium-low heat, bring the whipping cream and sugar to a simmer. Gently stir for 2-3 minutes giving the sugar time to dissolve and melt. Remove from the stovetop and allow to cool for 10-15 minutes.Stir in the lemon juice and pour the mixture into six small serving glasses and refrigerate for a minimum of 8 hours or preferably overnight.Best served with fresh whipped cream and shortbread or ginger cookies on the side.
