Lemon Posset

Oh how I love this elegant British dessert. The Posset is a creamy smooth pudding that has only 3 ingredients and chills in the fridge overnight. Yes Please! The magic, or science rather, that creates this effortless dessert without the help from eggs or gelatin is the combination of acidity from the lemons which work to solidify the proteins in the cream. Lemon Posset

The Posset is a creamy set pudding that comes together within minutes, has just 3 ingredients and chills in the fridge overnight.

  • 500 ml Whipping Cream (Heavy Cream)
  • 130 g Granulated Sugar
  • 70-80 ml Fresh Lemon Juice *approx 2-3 lemons depending on size


  • In a medium pot over medium-low heat, bring the whipping cream and sugar to a simmer. Gently stir for 2-3 minutes giving the sugar time to dissolve and melt. Remove from the stovetop and allow to cool for 10-15 minutes.
    Stir in the lemon juice and pour the mixture into six small serving glasses and refrigerate for a minimum of 8 hours or preferably overnight.
    Best served with fresh whipped cream and shortbread or ginger cookies on the side.
